Beef bresoala 100grams

Locally sourced cuts of beef are cured with a combination of reosemary and citrus before being given the red wine treatment. After which it is tied and hung up to air dry. Whilst drying the meat develops a deep burgandy colour and an equally rich aroma. Serve slightly chilled or at room temperature with shavings of cheese and a dressing of oil and lemon juice.
